I still haven’t had a chance to finish putting the LA post together, so here’s a little teaser for you! Here is a picture from last Friday to keep you interested!

Stacey & I were able to visit The Tonight Show. We sat on the floor on the second row (there’s only two rows). About 15 minutes before the show went live, Jay came out to warm up the audience(before he went to put his suit on). When he was done going over how the show works, he asked if anyone had questions. There were a group of cheerleaders from Canada in front of us & one of them asked if they could have their picture made with him. He invited them up & someone on the crew took a Polaroid of them. He asked again if anyone had questions and a guy raised his hand & he and his two children went up on stage to do the same. I leaned over to Stacey and told her if he asked again, I was going to raise my hand. She said no, but I did it anyways! So…. we got to go on stage and visit with Jay and have our picture made! He was asking about where we were from & what we did for a living. When I said that I was from Oklahoma, he made a joke about having flushing toilets, he also tried to make funny jokes about me being in the mortgage business, but I told him I worked for Chase & we were secure! He was also giving Stacey a hard time! It was cool!

The show was interesting…Michael Douglas, Travis Smiley & Good Charlotte were the guests. Of course I DVR’d the show before I left town just in case we were on TV! Good thing I did, because we were. We were standing up around the stage when he came out & you could see us shaking his hand & clapping!!!! Then you could see the back of our heads! It was a fun day!

Black Bean Salsa

1 can corn (yellow or gold & white)(drain most of the juice)
1 can black beans (drained and rinsed)
1/2 red bell pepper
1/2 bunch green onions
Juice of a small lime
3 tablespoons balsamic vinegar
1/2 teaspoon cumin (I don’t really measure this)
1/4 teaspoon garlic salt (or this)
Cilantro

Mix all together & enjoy!! This gets better after sitting in the fridge for a while!

A quick food post

I promise the trip pics are coming…I’m still trying to get them edited & the stories to go with them. So for now, a post I’ve been meaning to make for a few weeks. Of course, it’s about food!

The first item is jalapeno Poppers from The Pioneer Woman I took these pictures the last time I made them. We made them the first two football Saturday’s…so amazing!



This is probably my new favorite thing. Black bean salsa is now a big favorite of mine. It is SO easy and SO good and not bad for you, it’s just what you eat it with that adds fat & calories! Last night Joey made grilled chicken and I spooned this on top…SO yummy!

I'm Back


I had a great time in LA. I have tons of pictures (like around 300), I’m obviously not going to share them all, but I will be back with stories and pictures….I’m just too tired right now! I hope you have a great day!

New Recipe Wednesday

I tried a new recipe last night:: Chicken Parmesan Subs from the RR Everyday magaznine (March 2007).



As you can see we had a caesar salad to go with them. We both liked it, but agreed that next time we didn’t want the sauce spooned over the chicken. The best part was the garlic bread. I will never make garlic bread the same again. It was so good when you rub fresh garlic over the top of buttered, toasted bread! YUM-O (as RR would say)!

BOOMER SOONER

Joey & I have always had our game day traditions. Last year we started some new traditions that we hoped would be fun for the whole family. Each year, we get a new OU shirt, hat or jersey. We wear our shirt every game day. We have Crimson pancakes for breakfast (see picture above). This year Joey figured out how to make them football shaped! We have taught Jaxon to say OU BABY & BOOMER SOONER!!! We love game day around here!!!

Saturday night Jaxon got really into the game. He would yell “go, go, go” & when we scored (ELEVEN TIMES, I might add) he clapped and did the happy dance! It was fun to watch. Naturally, he’s much more into it this year than last. Two years old & a true fan!
